My best friend was here last weekend and the first thing she said she wanted to do was to make these popsicles from the cover of Everyday Food. I was overwhelmed at first: "They look so nice! They must be hard to make!"... but we read the recipe and it was so easy it was laughable.
I couldn't find the recipe online to just share the link with you (too soon?), but will share the general instructions with you so you can go forth and make popsicles to enjoy for the rest of the summer!
First things first, get your hands on a popsicle mold. I've had mine for years and it's the only popsicle mold I could get my hands on (aka. before popsicles were trendy!).
Once you have your mold the whole secret is this: white grape juice. Just pick your fruit (we used 1/2 a kiwi, 3-4 strawberries, a dozen blueberries, and half a nectarine) and layer it in pattern or just shove it in the mold, depending on how pretty you want it to look. Then, slowly pour white grape juice into each of the molds, leaving about 1-2 mm of head space. Carefully put the tops on and transfer to the freezer where it should freeze for 6 hours or longer.
The baby loved these to beat the heat and I have just put a batch in that are 1/2 strawberry yoghurt with straberries and white grape juice layered on top. Can't wait to see what they look like.

ReplyDeleteThese fruity ones are awesome! I think we have the same (cheap) popsicle holders, mine's blue. Heehaw!
My favorite way to make healthy-ish popsicles is to fill up the holders with leftover smoothie. It usually turns into a math quiz for the kid. How many sticks do we need? How many are left? etc.
My mom used to make popsicles out of Jello. . .and they are so yummy!!
