This is all to say that now I'm in my own kitchen and working on being on the candida diet (and vegan) as much as possible (80% of the time?). Risotto is by far one of my favourite bowls of comfort food, and stupid cheap to make if you forego the fancy rice, wine, and cheese! It's the method that brings the stickiness. I ate it with a load of sambal olek and a massive service of green beans. YUM.
CHZY Barley Risotto with Carrots
First step, put 5 cups veg broth to boil in a small pot.
In a large pot over medium heat melt 1 tbsp coconut oil. Add 1 small onion, diced, and saute until translucent. Add 1 tsp cut sage, 1/4 tsp ground sage, 1/2 tsp marjoram, 1/2 tsp lemon pepper, and 2 cloves garlic, minced. Cook for 1 minute. Add two carrots (medium) diced, and saute for five minutes, adding water to the pot if things are sticking. Then add 1 cup barley and stir well. Add 2tbsp apple cider vinegar and cook mixture until "dry". Add the broth one cup at a time and let cook each time until dry. Use only what you need to cook the barley. Once the barley is cooked add 1/2 cup chopped walnuts and 1/2 cup nutritional yeast and stir.
Serve immediately (with lotsa sambal olek)!
